Food Services
The food services at NCI includes 3 meals, and 2 snacks per day. Breakfast is
served at 7:00 a.m., Lunch at 12:00 p.m., and Dinner at 5:oo p.m. The average
capacity per month varies between summer and winter months.
In the winter,
average meals served per month is 26,000. In the summer months, that number drops
between 20,000 and 24,000 meals per month. Snacks are served at 3:00 p.m. and
8:00 p.m., and all meals and snacks are prepared according to the USDA guidelines. The
Cafeteria at NCI can seat 120 clients at one time. The kitchen is small in
consideration of how many meals are served, and includes 4 ovens, one walk-in
fridge, and is fully supplied. Average capacity per meal is 200 clients for
breakfast, 160 clients for lunch, and 120 clients for dinner.
Dietary services is staffed with 1 food service manager
(Arlene Enrico), and 2
full time cooks. All other volunteer work is provided by: clients/relatives, Community Service workers,
HBS, DWI, JTPA, and DVR. Food services usually rotates 20 client volunteers
weekly. Food is also purchased through the Community Pantry at
$0.14 per pound to cut costs.
